Peach cobbler muffins are delicious summer treat with a perfect crumble topping and cinnamon flavor. They are best with fresh peaches during peach season but you can also use frozen or canned peaches so you can enjoy them year-round.
If you use canned peaches make sure to drain them, frozen chopped peaches do not thaw and fresh peaches are better without peel for best texture.

What ingredients do you need for peach cobbler muffins?
All purpose flour
Granulated sugar
Cinnamon
Unsalted butter
Baking powder, Baking soda
Eggs
Plain yogurt (or vanilla yogurt)

What is a streusel topping?
Sweet buttery streusel is great topping with crumbly texture on muffins, pies and cakes and simple to make from only few ingredients.You can make it up to three days ahead and keep
it in airtight container in refrigerator before use. It takes simple recipes to a higher level.
How to make streusel topping?
In a small bowl combine the flour, sugar and cinnamon and stir. Add the cold butter to this mixture and rub it in with your hands until crumbly. Set aside.
How to make it crumbly?
The trick is in adding small pieces of cold butter in a mixture by rubbing it in after all other ingredients are mixed together, this will give the streusel topping crumbly texture otherwise it may turn into sticky dough.
How to prepare muffins?
Make muffin butter : Start by preheating the oven to 375 F and line a 12 muffin pan with paper liners.
In a large bowl add the flour, baking powder, baking soda, cinnamon, salt and sugar and whisk together until combined then add diced peaches reserving about 3/4 cup for topping the muffins, and stir to coat. In a medium bowl whisk eggs, yogurt and oil and stir that mixture into dry mixture until just combined.
Assemble muffins : Portion the batter out into the muffin cups evenly (about 3/4 full). Add the remaining chunks of peaches on top and a spoonful of the streusel topping in each cup.
Bake for about 18-20 minutes until golden brown and a toothpick inserted into the center of muffin comes out clean, pay attention not to over-bake them so they keep moist inside.When done remove muffins to a rack to cool. Serve warm or at room temperature.
Notes:
Muffins can be stored in refrigerator and stay soft and moist up to 3-5 days. Well sealed they can be frozen up to 2-6 months.To defrost leave them in fridge overnight. You can heat them up in the microwave for a few seconds or in the oven.

Can’t wait to make these
These were just okay. I used fresh peaches and measured out 2 cups but the muffins didn’t taste very peachy. It’s prime peach season and the peaches are very flavorful. I also got 17 regular sized muffins out of the recipe not 12. Even making this many I still had a couple that over-filled the cups a bit. They had a nice cinnamon taste, but wish they would have tasted more like peach. My kids suggested I not make these again.
One photo has a glaze on top of the strudel, what might the recipe be for that?

Powdered sugar and just a little water
Confectioners Sugar Glaze
1 cup sifted confectioner’s sugar
1-3 tablespoons milk, half and half, water, or flavored liquid of choice
1/2 teaspoon vanilla extract or other flavor
Whisk together sifted powdered sugar, vanilla extract, and enough liquid to thin the glaze to a consistency you like.
Looks like just a typical glaze. I usually just put powdered sugar in a bowl and add milk until I get the consistency I want. Sometimes I might add a little vanilla or melted butter.

Can you use canned peaches?

Yes! You can always use canned varieties of fruit for and fresh fruit recipe, just drain and pat dry.
I made spiced rum peach hand pies late last year. Could only find canned peaches (I live in the Midwest.) Yuck!! We had to sprinkle a lot of turinado sugar on them to make them edible. Such frozen peaches if fresh are not available

Nothing has measurements pictured is one egg but reading recipes says eggs. Also how do you the icing on top?

These are SO good and they smell wonderful when they are baking. Mine don’t look exactly like the ones in the picture, but do things ever look like professional photos? A friend of mine asked if gluten-free flour can be used, and since I don’t know and couldn’t find the answer in the instructions, does anybody know?

Can u use something else other than yogurt?
Yes. Sour cream.
Sour cream should substitute for the yogurt. Buttermilk might work but the texture of the batter might be a little runnier.
This recipe is delicious! I’ve made it several times because my family keeps requesting it!
What is the nutrition information?
My batter was thick, did not look lile picture. I went back to make sure I added everything and I did. I will keep trying.
