As you may already know, in Mexican cuisine there is a multitude of different dishes that include tortilla and various fillings, and differ only in the way of twisting tortillas.
So we have burritos, tacos or chimichangas. It is easy to prepare, and we are sure that your household members will adore it.  Since we love Mexican cuisine, and are not in Mexico, this time we are making … the one with chicken and guacamole. Irreplaceable chicken in an irreplaceable tortilla.

Baked Chicken Avocado Chimichangas will gather the family, make you enjoy your meal more and create good mood - and what else could be more valuable?

Place the tortillas on a flat surface and spread with butter. In the middle of tortillas put a spoonful of mashed beans, then guacamole, shredded chicken and grated cheese. Wrap the tortillas into burrito. Lay chimichangas down in a sprayed baking dish. You can adjust spiciness of the stuffing to your taste – it is safer that way. Bake for 15-20 min in preheated oven (350F) until the chimichangas are golden brown and crispy. Serve warm with additional shredded cheddar cheese, guacamole and salsa if desired.

Of course, a few minutes later, mine story ends as the last Chimichanga was gone. Hopefully, I managed to take a couple of shots to show you, and so my warm recommendation is to double everything.

Ingredients
  

  • 4 large burrito-size flour tortillas
  • 1/2 cup refried beans
  • 1 cup guacamole
  • 2 cups shredded cooked chicken
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • cooking spray
  • optional: additional guacamole salsa

Instructions
 

  • Preheat oven to 350F
  • Place the tortillas on a flat surface and spread with butter.
  • In the middle of tortillas put a spoonful of mashed beans, then guacamole, shredded chicken and grated cheese.
  • Wrap the tortillas into burrito.
  • Lay chimichangas down in a sprayed baking dish.
