Baked Chicken Avocado Chimichangas

  • 4 large burrito-size flour tortillas
  • ½ cup refried beans
  • 1 cup guacamole
  • 2 cups shredded cooked chicken
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder
  • ½ teaspoon chili powder
  • cooking spray
  • optional: additional guacamole, salsa
  1. Preheat oven to 350F
  2. Place the tortillas on a flat surface and spread with butter.
  3. In the middle of tortillas put a spoonful of mashed beans, then guacamole, shredded chicken and grated cheese.
  4. Wrap the tortillas into burrito.
  5. Lay chimichangas down in a sprayed baking dish.
  6. You can adjust spiciness of the stuffing to your taste - it is safer that way.
  7. Bake for 15-20 min in preheated oven (350F) until the chimichangas are golden brown and crispy.
  8. Serve warm with additional shredded cheddar cheese, guacamole and salsa if desired.
