Tis the season for apples!
I don’t have to tell you that fall is the perfect time for making apple pie, what with the bounty of fresh apples – their sweet-tart scent filling the brisk air. Pie is just a natural vehicle for enjoying all those Honeycrisps, Mutsus, Pink Ladies, Galas, and Granny Smiths.
Who doesn’t love bite-size desserts, right?
But as much as a fresh apple pie is enjoyable to eat, it can be intimidating to make and even trickier to serve. My solution? Miniature pies, baked in a cupcake pan.
Well, I know what you’re going to say…..yet another bite-sized pie. You already posted Apple Crisp Bites !! But if you thought that I’m done with bite-sized desserts, you’re wrong.
And let’s be honest, mini desserts are just better than regular desserts. Right?
Today, I’m sharing with you my new twist: Apple Pie Bites!!!
Apple Pie Bites with Cinnamon Roll crust
With press-in crusts, easy apple pie filling, and a simple crumb topping, these bite-sized desserts don’t require any special rolling, weaving, or fluting skills to create impressive little treats.
How to make Apple Pie Bites
To start, you’ll need a standard 12-cupcake/muffin pan. You’ll also need two Regular-size cinnamon roll doughs, or you can use your favorite homemade recipe. If I’m being honest, I usually just cheat and use store-bought dough when I’m making these cupcakes.
Open cinnamon rolls and flatten each one with a rolling pin, into a 4-inch round (dust with flour if you find it too sticky.)
Place the flattened cinnamon rolls into each muffin tin. Press gently into the muffin tin, and cut off extra around the edges.
Fill each cup with apple pie filling, then top with the crumble topping.
Q : Do I have options for a crust other than a cinnamon roll crust?
A : Graham Cracker crust is always a good solution, Oatmeal Cookie Crust, Homemade or store-bought pie crust also works great!
TIPS FOR MAKING THE BEST APPLE PIE BITES
- Cinnamon roll dough: Regular-size cinnamon roll works best for standard-size muffin tins. I used two 13-ounce cans of Pillsbury refrigerated cinnamon roll dough, although other brands work too.
- Note that large sizes like Grands are slightly more Work, as you’ll need to tear the dough to fit the muffin cups. You can reuse the leftover strips to make some extra cups.
Apple pie filling: One 21-ounce can of apple pie filling is enough for 12 cups.
You can also make homemade filling if you wish (see recipe notes). - Make sure to flatten each cinnamon roll before placing it in the muffin pan, otherwise, they’ll puff up too much.
- Dice your apple slices into smaller pieces (1/2 inch) if yours are too big. When adding the filling to the muffin tin, make sure to drain the juices first.
- You can swap out the apple pie fillings for pecan or pumpkin.

Ingredients
Crust
- 2 packages refrigerated cinnamon rolls dough regular size 13 oz each
for the homemade Apple Filling Option
- 2 Tablespoons butter
- 3-4 medium apples peeled cored and diced in to 1/4-inch cubes
- 1/3 cup brown sugar
- 3 Tablespoons water
- 1 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1 Tablespoon + 1 teaspoon cornstarch
- 2 Tablespoons water
for the canned apple filling option
- 1 can apple pie filling
Crumble Topping
- 2 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- Whipped cream ice cream, or caramel sauce for topping
Instructions
- Preheat oven to 350°F. Spray a 12-cup standard muffin tin with nonstick baking spray.
- Add the flour, brown sugar, and walnuts to a medium bowl. Cut the butter into small cubes and then add them to the bowl. Using your fingers or a fork work the butter into the flour and sugar until crumbly.
- Open cinnamon rolls and flatten each one with a rolling pin,into 4-inch round (dust with flour if you find it too sticky.)
- Place the flattened cinnamon rolls into each muffin tin. Press gently into the muffin tin, and cut off extra around the edges.
- Fill each cup with apple pie filing, then top with the crumble topping.
- Bake for 15-18 minutes or until golden brown. Top with whipped cream, with ice cream, or drizzle with caramel sauce.
