Recipe type: Dinner
Serves: 4
Ingredients
  • ½ cup Mayonnaise
  • ½ cup shredded Parmesan cheese
  • 4 boneless skinless chicken breast cutlets.
  • 4-5 teaspoons Italian seasoned dry bread crumbs
  • ½ teaspoon garlic powder
  • pinch of salt
  • ½ teaspoon lemon pepper
Instructions
  1. Preheat oven to 400 degrees F.
  2. In a small bowl combine mayo, garlic powder, and parmesan cheese.
  3. Moisten chicken breasts with water and lay on baking sheet (I line my baking sheet with parchment paper to make clean up easy)
  4. Divide the mayonnaise mixture evenly among the chicken, just spreading it across the top of each piece, and sprinkle with salt and pepper to taste.
  5. Bake for 15-20 minutes, remove from oven and sprinkle bread crumbs on each piece of chicken.
  6. Return to oven and bake for additional 20 minutes or until chicken is cooked thoroughly and juices run clear.
  7. Tops will be browned and chicken will be incredibly juicy.
  8. You can also finish them off under the broiler for a minute or two to get them extra browned on top.
  9. Serve with a veggie like these delicious fresh broccoli that I steamed.
  10. Season with a dash of fresh parsley, if desired.

My husband and I just ate this for dinner tonight. YUMMMM!!! It turned out perfect! It’s just the two of us so I only made 2 breasts, and didn’t really measure the ingredients, just kinda threw stuff in a bowl and mixed it up. Turned out perfect!

Hi Marienny! Thanks for the kind words and I hope y’all enjoy it!
I’ve honestly never tried this with Provalone.
Parmesan is a pretty unique cheese, so You need a very hard, dry cheese to sub for parm.
Romano or Asiago cheeses are common subs for parmesan, and taste of Provolone can vary depending on the length of aging from a sweet mild flavor with a more creamy texture,
to a distinct piquant taste and dryer texture, longer aging time. So maybe you could try with aged provalone cheese.
      Hope this help.

I made this tonight and it was REALLY GOOD. The only thing I did differently was season my chicken prior to putting the mayo spread on top. I seasoned it o both sides so it would be flavorful and not bland. Other than that I followed the recipe exactly and it was great.

Hi! This recipe looks delicious! I am gonna make it tonight! I was wondering, do you put mayo on the bottom of chicken too, or just the top?

    Thanks!

    Hi Dan,

Your recipe calls for chicken breast cutlets, but the pictures show regular chicken breasts. Cutlets are much thinner cuts of the breast which could make a difference in the cooking time. Could you clarify which cut of the breast you used? Thanks. Look forward to trying this recipe!

Made this for dinner tonight with baby potatoes and broccoli. Yum-meeeeee. I did pound out the breasts so they’d cook faster and be tender (if the bird was a bit tough, you never know) I grated fresh parmasean in my ninja food processor and stirred in some fresh garlic to the mayo mixture. I only had plain Panko so I stirred some Italian seasoning inot it with some olive oil, great flavor and browned perfectly with a nice crunch. Everyone had seconds.

I made this for a quick dinner the other night when I was really not feeling well and did not have the energy to make anything that required much effort. This totally fit the bill and was fantastic! The chicken was so moist and delicious. I did not have lemon pepper, so I omitted it completely and just added some parsley to the breadcrumb mixture. I think I may try some panko breadcrumbs next time, but this recipe is definitely a keeper. My husband and I both loved it! Thanks for the recipe!!

Just made this for lunch. We had smaller cuts of chicken, so I halved most of the ingredients and only cooked it for 24 minutes total… O.M.G. IT IS SO GOOD.

Silly question I’m sorry, but is it the parmesan in a can like the powder stuff or actual shredded cheese?

Made tonight..cooked as directed added maybe 5 minutes to the first 20, subbed panko crumbs ciojed additional 20 minutes. I used 5 full chicken breasts. No additional time needed. I made it w/ garlic bread, thin spaghetti w/ a garden veggie sauce, more parm, and crushed red pepper, becuase I like it spicy…plus a side of healthy veggies!! Absolutely easy to make and delcious. I made this. Did not cook the chicken breast as long as recipe said. About 15 minutes and it was at or over 165 degrees. Put breadcrumbs on it and stuck it under broiler for a couple minutes. It was very good! Served with sauteed green beans and red bell peppers and roasted potatoes.

This recipe is quite easy and delicious..actually extremely delicious. I’ve made it several times. The coating of the chicken was so good I tried to over duplicate it and it didn’t work out. Keep to the script. You may ruin what it takes. However I added a step that made it another awesome dish. I followed the recipe exactly. But I butterflied the chicken and added provolone and spinach as a stuffing and wow! So gooood.
