When it comes to friendships, I feel blessed to know that I have met some wonderful people over the years – each one unique and special in its own way.
Most of them are the friends I’ve known since childhood – I think these friendships have some special line. There are the friends I made in high school or college, those that spent hours preparing for an exam, playing basketball or running with me. The roommates who were my second family. And of course, there are the friends I’ve made because of this blogging world, who share my passion for cooking and baking, and all things food.
You know that as people get older, they get more stubborn, and so some of my best friends are born stubborn in their refusal to try new things. Can you image the look on their faces when I mentioned that i’m planning to make something with Brussels sprouts or asparagus over the weekend ?? priceless 🙂
But thankfully they share my passion for sweets ! I have something today, which I’m sure they’ll love it – and when it comes down to it, these are the best recipes of all: simple, quick, and utterly delicious.
This No Bake Strawberry Icebox Cake is SO good, so good that you’ll want to eat the entire batch yourself. It’s so simple to make and so flexible that you could even put it into mini dessert shooters and use mini spoons. The options are endless and you could even swap out the strawberries and bananas for other fruits! Plus this No Bake Strawberry Icebox Cake is budget friendly since it uses only a few ingredients.
“Can we skip dinner tonight and eat these right away ?”
“Maybe,” 🙂
- 19 oz graham crackers
- 2 pounds fresh strawberries
- 3½ cups heavy cream
- 1 banana, sliced thin
- ½ cup powdered sugar
- 2 tsp vanilla
- ¼ tsp salt
- Cream powdered sugar, vanilla, and salt with the heavy cream in the bowl of a stand mixer. Beat until the cream mixture holds stiff peaks.
- Spread a thin layer of heavy cream mix in a 9x13 pan just to coat the bottom.
- Layer 5 graham crackers across the center of the pan, then 2 more,breaking them as needed to fit around the top and bottom edges.
- Spread a thick layer of heavy cream mix over grahams and top with a hearty layer of sliced strawberries.
- Place graham crackers on top of strawberries, then heavy cream mix, then layer of thinly sliced bananas.
- Repeat the graham-strawberries-cream layers 1 more time (3 times total) and you should reach the top of the pan.
- Refrigerate for at least 4 hours or overnight until the graham crackers have softened completely.
- Top with a few sliced strawberries or whole strawberries if you desired.
- Serve chilled.

Banana is used for the second layer of fruit, above second layer of crackers and heavy cream mix.

ok so I am blond……why do you put 5 crackers in the middle of the pan….would you not fill the pan top to bottom and side to side
or are you talking a full sleeve of crackers???? Something I am missing in the translation?
I made the heavy cream mixture but it’s not thickening…anything I can do to help it thicken?

Yes, it does look good, but I would leave out the bananas…..dislike bananas in anything……
Ohhh, snap, this recipe is completely invalid and doesn’t work without bananas. Simply discard the recipe if you don’t like bananas and look for another recipe without bananas. Sorry.
Made without Bananas! Tastes awesome! Bananas have always made me GAG! Next time I may try Extremely thin Kiwis instead of Bananas. I know it throws off the colour, but they are excellent together.
I made this Yesterday for a pot luck at worK today. It Was amazing!! Everyone loved this cake! It’s the perfect summer dessert. The only change I made was to substitute the graham crackers for Biscoff biscuits. But I will make this for many years to come, Thank you for sharing!!!

I’ve made these several days ahead, although I would try to stick to 24-48 hours or so,
because it does get soggy after more than two or three days in the fridge.

I love this idea! So easy and it looks so delicious! I have a recipe similar to this that uses chocolate frosting and no fruit, so this will be a nice fresh take on a no bake cake! 🙂

Not sure if this is a silly question. But could I use store-bought Cool Whip instead of the heavy cream? It may not be as tasty, but probably a little healthier than all the heavy cream.
Has anyone ever made this recipe with Cool Whip? Curious if it’s just as good?

Yes I’ve used cool whip and it was delicious! Made it for Memorial Day bbq last year and everyone devoured it!
Lydia, Cool Whip is not even food, it’s just a bunch of chemicals. Making real whipped cream with real food ingredients (precisely two ingredients: cream and sugar) is much healthier (not low calorie) than whipped chemicals–our bodies can’t even recognize that stuff as food–because it’s not…. Once you try REAL whipped cream, you’ll be so happy and it’s so simple and SO delicious, you’ll never go back. If healthier is your concern, don’t eat Cool Whip at all, it’s just such nasty stuff.
This is so good! I added an 8oz pack of cream cheese and an extra 1/4 cup of powdered sugar to the whipped cream mix. I omitted the banana and added blue berries for Fourth of July.
It is simple and easy to make. Best recipe for summer

Hello! I really love this page <3 Im not from the USA so Im not sure what heavy cream is 🙁 Is heavy cream the same as condensed milk?
Heavy cream is cream that has a high fat content so you can whip it up for whipped cream. and have it thick and hold it’s shape. Whip it too much and it becomes butter.
Can someone tell me when it says vanilla do they mean, vanilla extract, vanilla pudding, vanilla bean???? Not sure what they mean by vanilla

We made this for the first time last night. It was really hard to let it sit, but upon trying today I can say that it is so delicious! My husband loves it too and he doesn’t have much of a sweet tooth. I’m usually really particular about sticking to a recipe and never altering, but I feel like this would be excellent with other fruits as a good way to use what we have that may be too ripe to eat raw. We may try it for that purpose, but LOVE the strawberries and bananas. Thank you so much for sharing this recipe, it’s a keeper!
ok so I made this last night for our memorial picnic, my son cant eat dairy so I made coconut whip cream. Im hoping its still good and that it comes out, whip cream wasnt as fluffy and didnt have enough to make all the layers the recipe calls for. I used 4 cups of coconut cream but bext time need like 6 cups.
