Baked Chicken Avocado Chimichangas

Ingredients

  • 4 large burrito-size flour tortillas
  • 1/2 cup refried beans
  • 1 cup guacamole
  • 2 cups shredded cooked chicken
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • cooking spray
  • optional: additional guacamole salsa

Instructions

  • Preheat oven to 350F
  • Place the tortillas on a flat surface and spread with butter.
  • In the middle of tortillas put a spoonful of mashed beans, then guacamole, shredded chicken and grated cheese.
  • Wrap the tortillas into burrito.
  • Lay chimichangas down in a sprayed baking dish.
  • You can adjust spiciness of the stuffing to your taste - it is safer that way.
  • Bake for 15-20 min in preheated oven (350F) until the chimichangas are golden brown and crispy.
  • Serve warm with additional shredded cheddar cheese, guacamole and salsa if desired.
