Ingredients
CRUST
2 1/2cupsgraham cracker crumbsdivided
1/2cupbuttermelted
1tablespoongranulated sugar
Filling
8ozcream cheesesoftened
1cuppowdered sugar
1teaspoonvanilla extract
1teaspoonfresh lemon juice
2 8ozcontainers whipped toppingthawed, divided
1-2poundsfresh berriesstrawberries & blueberries or your favorite, sliced, divided
Instructions
Crust
Butter a 8x8 or 9x9 inch baking dish. Mix 2 cups of graham cracker crumbs and melted butter until well blended.
Press this mixture into the bottom of the prepared baking dish. Place in freezer while you make the filling.
Berry Cheesecake Filling
Add cream cheese, powdered sugar, lemon juice and vanilla to a large mixing bowl. Mix with a hand mixer until smooth, then mix in one container (8-ounces) of whipped topping.
Slice or chop strawberries as desired. Spread half the cheesecake mixture on top the crust, arrange half the berries on top. Cover with the remaining cheesecake mixture, and top with remaining berries.
Topping
Top the dessert with about half the remaining whipped topping. Chill for 2-3 hours before serving.
Sprinkle remaining graham crumbs on top and decorate with remaining berries, if desired. Store in refrigerator for 1-2 days
Notes
If you want to have clean edges and nice shape, leave it in the fridge overnight. It will be more solid and easier to cut.
You can also add raspberries, blackberries or make a berry mix.
Use only fresh fruit, if using frozen fruit, once it thaws it’s pretty wet and will make your dessert soggy.
