This just seems obvious to me, you guys. When life gives you Coke, you make Double Fudge Coca Cola Cake. I must say though, photographing these was quite a traumatic experience for me. After the sugar bomb episode the other day, I decided it was time to put my foot down. The sugar addiction must stop. I was going to try to stop eating sugar for one week. Just one, short, little week. Shouldn’t be too hard, I thought.
Oh, how wrong I was.
Photo after photo it leaves you craving for a bite, just one, small, tiny bite. Bite after bite, it leaves you craving for more.
It is torture.
Everything is in slow motion. It seems like the whole world is stopping too giving you all the time you need to take a bite and enjoy it.
Oh and I took a bite of the cake….not just one….

Cracker Barrel Double Fudge Coca Cola Cake

Ingredients
  • 1 cup Coca Cola
  • ½ cup vegetable oil
  • 1 stick butter
  • 3 Tblsp. cocoa powder
  • 2 cups granulated sugar
  • 2 cups all purpose flour
  • ½ tsp. salt
  • 2 eggs
  • ½ cup buttermilk
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • Frosting:
  • 1 stick butter
  • 3 Tblsp. cocoa powder
  • 6 Tblsp. cream or milk
  • 1 tsp. vanilla extract
  • 3¾ cups confectioner's sugar
Instructions
  1. Preheat oven to 350.
  2. In the large bowl of a mixer, stir together sugar and flour and set aside.
  3. In a saucepan, mix Coca Cola, oil, butter and cocoa and bring to a boil.
  4. Pour the boiling Cola mixture over the flour mixture and beat well.
  5. Add eggs, buttermilk, baking soda and vanilla and beat on medium for about a minute more.
  6. Pour batter evenly into a greased and floured 13 x 9 inch baking pan and bake for about 25 to 30 minutes.
  7. Immediately upon removing cake from oven, prepare frosting.
  8. In a saucepan over medium heat, bring butter, cocoa powder and milk to JUST boiling. Remove from heat and whisk in powdered sugar and vanilla.
  9. Spread on the cake while it's warm.
  10. Let cake cool to room temperature, then cut and refrigerate until serving.
  11. Serve with Vanilla Ice Cream and choice of toppings like whipped cream, sprinkles, etc.
  12. Enjoy
