Cream Filled Strawberries

Delicious and unique way to serve the fresh strawberries….

That might be a record for me. But these were just too good not to share as soon as I possibly could.

Not sure where I took a left turn (or right) , but strawberries is my new obsession – I love it!
Maybe it’s just one of those things that continues to prove “tastes change.”  This next recipe idea came to me the other day while I was eating a bowl of strawberries. It made me think of Strawberry and Cheesecake (which I love) and how a little bit of cream cheese would make berries even better. And of course i look for a solution on the internet. One of my favorite food blogs, Joy of Baking share wonderful Cream-Filled Strawberries recipe, Basically it’s just a cheesecake filling (cream cheese mixed with flavorings and sugar) piped into x-cut strawberries. These might seem complicated but I promise they are so easy to make and it is perfect for any spring or summer party.

Choose about 12 berries that stand up the best, and cut off the tops.

Using a sharp knife, cut an ‘X’ into each strawberry, starting at the top of the strawberry and cutting down almost to the bottom. (The cut should be such that the strawberry will open up but don’t cut all the way to the bottom of the strawberry or it will completely fall apart.)
you will be able to pull apart, kinda like a flower.

Make your cream filling and pipe the cream into the center of each strawberry. Sprinkle on some graham cracker crumbs, arrange them all pretty, and watch ‘em fly off the platter!

Ingredients
  • 12 large fresh strawberries
  • ⅓ cup lowfat cream cheese (softened)
  • ⅓ cup cold heavy whipped cream
  • 2-3 tablespoons powdered sugar, or to taste
  • ½ teaspoon pure vanilla extract
  • graham cracker crumbs (optional)
Instructions
  1. In a small mixing bowl, whip (with a wire whisk or an electric hand mixer) together the cream cheese, powdered sugar, heavy whipping cream, and vanilla extract, until light and fluffy.
  2. Wash the strawberries and cut off the tops.
  3. With a small sharp knife, cut an "X" into each strawberry, starting at the top of the strawberry and cutting down almost to the bottom of the strawberry.
  4. (The cut should be such that the strawberry will open up but not fall apart.)
  5. Gently, with your fingertips, spread each strawberry apart to make "petals".
  6. Spoon the cream into a pastry bag fitted with a large star tip.
  7. Carefully place the tip into the bottom of each cut strawberry and squeeze the filling into each berry being careful not to overfill.
  8. Sprinkle on some graham cracker crumbs, if desired.
  9. Serve immediately or refrigerate until ready to serve.
